Black Bean Soup

(Serves 16)

  • 3 (12 oz) jars chunky salsa
  • 10 (15 ounce) cans black beans
  • 2 boxes vegetable stock (or bouillon cubes and water to equal 4 c)
  • 4 c water
  • 2 Tbs cumin or chili powder
  • 1 tsp salt

Optional:

  • Add 1 large onion, finely diced and sauteed
  • Serve with sour cream
  1. In a large soup pot, mash salsa and beans.
  2. Add the rest of the ingredients and heat through.
