Irish Soda Bread
(makes 1 large loaf)
- 4 c flour
- 1 tsp baking soda
- 1 tsp salt
- 3 Tbs sugar
- 2 Tbs butter
- 1 egg, lightly beaten
- 1 1/2 cups buttermilk
Optional:
- Replace up to 2 c flour with whole wheat flour
- Replace up to 1 c flour with rolled oats
- Add more sugar for a sweeter bread
- Brush with butter and buttermilk before baking
- Preheat oven to 350F. Grease a baking sheet.
- Mix the dry ingredients together.
- Beat the egg in a separate bowl, then mix in butter and buttermilk.
- Add wet mixture to dry, stirring with a spoon, and then mixing with your hands. Knead about 2 minutes on a lightly floured surface.
- Shape dough into a round and place it on the baking sheet. If you wish, use a sharp knife to cut an 'X' into the top of the loaf.
- Bake at 350F for 45 minutes.
