Irish Soda Bread

(makes 1 large loaf)

  • 4 c flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 3 Tbs sugar
  • 2 Tbs butter
  • 1 egg, lightly beaten
  • 1 1/2 cups buttermilk

Optional:

  • Replace up to 2 c flour with whole wheat flour
  • Replace up to 1 c flour with rolled oats
  • Add more sugar for a sweeter bread
  • Brush with butter and buttermilk before baking
  1. Preheat oven to 350F. Grease a baking sheet.
  2. Mix the dry ingredients together.
  3. Beat the egg in a separate bowl, then mix in butter and buttermilk.
  4. Add wet mixture to dry, stirring with a spoon, and then mixing with your hands. Knead about 2 minutes on a lightly floured surface.
  5. Shape dough into a round and place it on the baking sheet. If you wish, use a sharp knife to cut an 'X' into the top of the loaf.
  6. Bake at 350F for 45 minutes.
