Tomato Soup

From Canned Condensed Soup

(Serves 16)

  • 8 (10 oz) cans condensed tomato soup
  • 1/2 gallon (8 c) milk
  • 2 c water

Optional:

  • Add 1/4 c butter
  • Add 1 large onion, finely chopped and sauteed
  • Add 1 Tbs dried parsley
  1. Mix all ingredients.
  2. Heat thoroughly. Do not boil.

From Scratch

(Serves 18)

  • 3 (6 oz) cans tomato paste
  • 1-1/4 c flour
  • 18 c water
  • 3 Tbs salt
  • 1/2 c brown sugar

Optional:

  • Add 1/4 c butter
  • Add 1 large onion, finely chopped and sauteed
  • Add 1 Tbs dried parsley
  • You can substitute milk for part of the water if you boil the tomato paste in some water for a while first to lessen the acidity so the milk doesn't curdle
  1. Mix all ingredients thoroughly. Whisk to make sure no flour lumps remain.
  2. Heat thoroughly, until slightly thickened.
