Tomato Soup
From Canned Condensed Soup
(Serves 16)
- 8 (10 oz) cans condensed tomato soup
- 1/2 gallon (8 c) milk
- 2 c water
Optional:
- Add 1/4 c butter
- Add 1 large onion, finely chopped and sauteed
- Add 1 Tbs dried parsley
- Mix all ingredients.
- Heat thoroughly. Do not boil.
From Scratch
(Serves 18)
- 3 (6 oz) cans tomato paste
- 1-1/4 c flour
- 18 c water
- 3 Tbs salt
- 1/2 c brown sugar
Optional:
- Add 1/4 c butter
- Add 1 large onion, finely chopped and sauteed
- Add 1 Tbs dried parsley
- You can substitute milk for part of the water if you boil the tomato paste in some water for a while first to lessen the acidity so the milk doesn't curdle
- Mix all ingredients thoroughly. Whisk to make sure no flour lumps remain.
- Heat thoroughly, until slightly thickened.
